Vegan Gravy Mix

This vegan all purpose gravy mix is tasty, customizable, and oh so easy!! It makes 2 generous cups of gravy, enough to serve about 6-8 people. I often like to have a salad, some cooked veggies, and a homemade veggie burger or some seitan roast for dinner. But it can seem like a hassle to get out all the ingredients to make gravy. So I decided it was high time to make a gravy mix!! I played around with the ingredients to find my favorite customizable mix, and here it is. Now when dinner is almost ready I just have to grab a pack from the pantry, mix in my liquids, and gravy is on the table in 5 minutes!
Brown Gravy: Add two cups of water and two tablespoons of soy sauce to the gravy mix. Whisk until smooth and cook over medium heat until thick and bubbling. Let simmer for 1-2 minutes. Add extra pepper if desired.
Creamy Gravy: Add one cup of water, one cup of nondairy milk (or two cups of nondairy milk) and 1/2 to 1 teaspoon of salt to the gravy mix. Whisk until smooth and cook over medium heat until thick and bubbling. Let simmer for 1-2 minutes. Add extra pepper if desired. For the nondairy milk you can use powdered soymilk mixed with water, fresh unsweetened soymilk, or any storebought or freshly made nut or seed milk. Almond milk is my favorite, but others work just as well!
Mushroom Gravy: Chop a few mushrooms and sauté (in a bit of oil or just in a touch of water). Add to either the brown gravy or creamy gravy before cooking it.
Sausage Gravy: Crumble or slice/chop some vegan sausages (I recommend either breakfast or spicy herb). Sauté until a bit crispy. Add to either the creamy gravy or brown gravy before cooking or after it is finished.
Tip: To get a smooth gravy, make sure your liquid is room temperature (a bit cold is okay too, but not hot!) and gradually stir it into the gravy mix. When it is smooth, add a bit more of the liquid. After about half of it is stirred in and there are no lumps, you can pour in the rest. You could also just toss the mix into the blender with the liquid and blend for a few seconds. Pour it into your pan and cook it.
Seasoning: I did not add any salt to this gravy mix so that you could have the option of turning it into a brown gravy with soy sauce (I recommend organic soy sauce or Iiquid aminos as they are non GMO), or you can have a white gravy and add your desired amount of salt. It makes a mild, slightly peppery gravy, but feel free to add more pepper as desired! Or even some chili flakes, sautéed onions, or anything else you’d like in your gravy!
