Cranberry Gingerbread Date Bars
Looking for a healthy (but tasty!) snack to tide you over? Or a quick breakfast as you head out the door? Grab one of these vegan cranberry gingerbread date bars! These are made with whole foods, so they are full of nutrition, but they taste like a chewy gingerbread cookie!
Oats: great source of soluble fiber, iron, manganese, vitamin B1, protein,zinc, and more
Dates: naturally sweet, they are also high in fiber, potassium, magnesium, and a host of other important nutrients
Pumpkin seeds: a great protein source, they are also high in fiber, magnesium, manganese, phosphorus iron, vitamin B3, vitamin E, copper, and other essential nutrients
Walnuts: well known for being the most heart healthy nut, walnuts are an excellent source of omega 3s and have a good amount of zinc, protein, copper, manganese, biotin, and more.
Flax: this powerhouse seed is full of the important Omega 3 as well as fiber, protein, magnesium, iron, B6, calcium, and more.
Dried cranberries: besides being a sweet treat, these are a great source of fiber and all of those antioxidants and photochemical that cranberries have!
Cinnamon: this spice has a lot of powers! It controls blood sugar, is anti microbial, anti-inflammatoryand is a great source of manganese, fiber, calcium, and more
Ginger: the vast benefits of ginger cannot be seen in a nutrient chart. Instead, this powerful root is anti-inflammatory, helps with digestive problems, boosts the immune system and fights cancer. Yay ginger!
Molasses: a gingerbread flavor is not complete without the taste of molasses! This is the second most nutritious sweetener (dates being the first) and it is an excellent source of calcium, magnesium, iron, vitamin B6, and much more. I use organic blackstrap molasses for the most concentrated nutrients!
There is nothing but goodness in these delicious bars! They have a great chewy bite and a satisfying rich flavor. Feel good about snacking on them and giving them to your family! Great for lunchboxes!
