Vegan Date Sweetened Chocolate Mousse Cake
This gluten free* vegan chocolate mousse cake is a rich and special treat! But it is also very healthy!!
- The crust is made from dates, seeds, and cocoa powder
- The mousse includes cashews, dates, coconut milk, and cocoa powder. No sugar!
This cake comes frozen, in a cake box. When you are ready to serve it, let it sit in the fridge for several hours or overnight, or at room temperature for about 30 minutes to thaw (less time for the small size). It should then be soft enough to slice. If not, let it sit at room temperature until it can be sliced. You can serve it when it is frozen, kind of like ice cream cake, but it is a luscious and decadent mousse when you allow it to thaw. Keep leftovers in the fridge for several days, or freeze for longer storage.
Small 5” (12.5cm) cake - perfect to cut into 4 to 8 small servings
Large 8” (20cm) cake- can be cut into 12 or 16 wedges, or you can cut it into small squares for bite size servings
Crust: dates, sunflower seeds and/or peanuts, cocoa powder
Mousse: coconut milk, cashews, dates, coconut oil, cocoa powder, pure vanilla extract, pinch of himalayan salt
Chocolate swirl: cocoa powder, coconut oil, gula melaka
*although there are no gluten containing ingredients in this cake, it is made in the same kitchen as all of my baked goods, including wheat products. I do my best to clean well of course, but cannot 100% guarantee no cross contamination. If you have a severe allergy where cross contamination can result in a bad reaction, I do not recommend buying from my shop.
