I am always looking for easy and healthy snacks to make for my kids. Kids always seem to be hungry! And I like to get as much nutrition in the snacks as possible. The other day I was making dough for pizzas, so I decided to make a bigger batch and use part of it to make some snack buns! I had some of our My Plant Deli vegan cashew cream cheese in the fridge, so I decided to make cream cheese buns.
Here is my basic dough recipe:
1c cold water
1Tbsp instant yeast
1/4c ground flaxseed (optional)
3-4 cups atta flour or other whole wheat flour
Mix water, yeast, flax, and sweetener together. Stir in salt. Stir in flour one cup at a time. When it gets too stiff to stir, dump onto a clean countertop and knead in the rest of the flour until it is fairly firm and not sticky. Place in an oiled bowl with a plate on top and let rise for about half an hour.
*Feel Free to add other things to the dough such as ground nuts or seeds, leftover cooked rice, etc.
I used half of this amount of dough for my buns. I cut the dough into pieces and shaped them into little rounds with edges, like mini pizzas.
For the filling I mixed:
Spread the cream cheese filling on the buns and added toppings. For half of the buns I added sliced apples and sprinkled some cinnamon. For the other I spread on some mango purée, as I had just peeled and puréed a bucket of mangoes that day! ( thanks to my in-laws for the mangoes from their tree!). I put a small dollop of extra cream cheese filling in the middle of the mango purée. Get creative with the fillings, whatever you have on hand! Fruits go well with the cream cheese filling, and so does chocolate or jam!
Let the buns rise for half an hour or so, and bake at 170C until very lightly browned, about 20 minutes in my oven.
These buns were gobbled up quickly! They are very healthy, made with whole grains, flaxseed, cashews, and fruit and very little sweetener.
Let me know if you try making some cream cheese buns! Feel free to use any other dough recipe you like. You could even make roll-up buns like cinnamon rolls, only with cream cheese filling!
